This is the first time I am baking Pistachio paste but it is delicious! This homemade and vegan recipe is quick and easy. You just need a good blender or a food processor. The recipe is from Pierre Herme, a famous French Patissier.
Vegan Pistachio Paste
Ingredients for 230gr of pistachio paster/butter
125gr of unsalted pistachios
60gr of sugar
20gr of water
30gr of ground almond
2 spoons of neutral oil - I am using grapeseed oil.
Preheat the oven to 150 degrees.
Place the pistachios on a baking tray, and put them in the oven for about 15 minutes to roast the pistachios.
In a pan, boil the water and the sugar until it reached 121 degrees. Outside of the fire, add the pistachios. The sugar will crystalise them.
Transfer the pistachios and the ground almond to a blender. Blend the preparation for 2 minutes, then add the oil. Blend again. After a few minutes, the pistachios will release their oil. Once you have a smooth pistachio paste, it is ready!
I am using this pistachio paste for cake, tart or brioche but it is also delicious if you want to spread it on toasts or on brioche.
