Weekend Breakfast - Vegan Crêpes from Brittany



Crêpes and Galettes are definitely one of the main food you have to taste if you are lucky enough to travel in Brittany! Crêpes are the sweety version and Galettes the salty one.

In Brittany, most of the families have their own crêpes recipe but I am going to share mine with you ( and this is the Vegan version !).



Vegan Crêpes from Brittany


Ingredients for about 15 crêpes


  • 250gr of all-purpose flour

  • 60gr of sugar

  • 550ml of almond milk or any plant-based milk

  • Rum, or vanilla extract or orange blossom water

  • Some oil


Method


In a bowl, mix the flour and the sugar.

Add the almond milk little by little and whisk well between each time.

Once finished, the dough should be fluid without flour lumps. Add some 2 spoons of rum, 1 spoon of vanilla extract or orange blossom water, and mix until combined.


Grease a frying pan with some oil and put in on the induction plate. Add a bit of the dough and move the pan to cover all the surface. Once the edges of the crêpe are slightly golden, turn it on the other side. Once both sides are golden, remove the crêpe and set aside. Grease the frying pan and start again.


In Brittany, crêpes are usually eaten with butter and sugar or with salted caramel butter. But if you want to keep a vegan recipe, I recommend you to top it with almond butter, peanut butter, blueberries or maple syrup. Be creative and add whatever you fancy!
