Vegan Triple Chocolate Chip Cookies

OK, we all need sweet and comfort food during rainy days (even during sunny days). So cookies are definitely one of the best solutions to fight a bad mood, rainy weather... It is quick, very simple and so delicious! So let's try this vegan version!
VEGAN CHOCOLATE COOKIES
Ingredients for about 15 cookies
60gr of coconut oil or plant-based butter
60gr of cane sugar
60gr of coconut milk
34gr of maple syrup
220gr all-purpose flour
1 spoon of baking powder
150gr of chocolate chips or walnut, hazelnuts...

Preheat the oven to 180 degrees.
Whisk together the coconut oil the brown sugar and beating until well combined.
Add in the coconut milk, the maple syrup, whisk until well combined, set aside.
In a separate bowl, combine the flour baking powder. Add the dry ingredients into the wet mixture, stir until you have a smooth dough.
Add the chocolate chips and combine them.
Take two baking trays and put some baking paper on them.
When it is ready roll out the dough to form cookies balls as in the picture below. Of course, you can make whatever size you like but you might have to adjust the cooking duration.

Bake for 8 to 10 minutes.
Cool cookies on the baking trays for 15min before transferring them to a cooling rank.
