Vegan Rustic Strawberry & Almond tart


I love fruit tart and this is the perfect season for the strawberries so let's do a tart ! For this tart, I am using ground almond for the pie dough and the almond cream. I recommend you to try to make your ground almond yourself. It changes and improves a lot the taste of the tart and especially of the vegan almond cream.

Let's have a look at the vegan recipe!

Vegan Rustic Strawberry and Almond tart

Ingredients for a 20 cm tart :

For the pie dough

  • 75gr of oat flour

  • 50gr of ground almond

  • 30gr of almond butter or any plant-based butter

  • 35gr of sugar - I am using Xylitol instead.

  • 50ml of almond milk

For the almond cream filling

  • 60g of ground almond

  • 25gr of almond butter

  • 35g of sugar - I am using Xylitol instead.

  • 50ml of almond milk

  • 20gr of cornstarch

For the topping

  • 400gr of strawberries

For the tart dough - In a bowl, combine the oat flour, the ground almond, and the sugar. Add the almond butter and mix well. It will create a crumbly dough. Add little by little the milk to help to make a soft dough. Put in the fridge for 20 minutes.

For the almond cream - In a bowl, whisk together the butter and the sugar. Add the ground almond, the cornstarch and the milk. Mix until well combined. Set aside.

Preheat the oven at 180 degrees.

Take the dough from the fridge, and roll it on a lightly floured work surface. Place an 18cm diameter pastry ring in the middle of the dough. Add the almond cream, and put some strawberries in the cream. You can find the step by step in pictures below.

Place in the oven for about 25 minutes. The tart should be a bit golden as per the picture below.


Then remove from the oven, set aside to cool the tart off. Once cooled, add some fresh strawberries at the top.
